Description

Excerpt from Age as Affecting the Cost of Production and the Quality of Beef: Thesis During the last few years a tendency has developed among the more progressive feeders to produce baby beef. Experience has shown them.that pound for pound it is cheaper to produce good beef by keeping the animals growing rapidly from calfhood until they are from 18 to 20 months old and weigh 1100 to 1200 pounds, than by letting them grow until they are matured and then fattening them.at weights ranging from 1550 to 1700 pounds. It is well known that this baby beef has not so good a flavor as the older beef and the question arises as to Whether the improvement in quality in the older beef will pay for the increase in cost. In order to gain some information on this question a feeding experiment and slaughter test was conducted as outlined in the following pages.
